Easy coconut pancakes: Quick recipe with no extra hassle

Juicy, tender, and aromatic coconut pancakes are becoming a real breakfast hit. Here is a simple recipe by Ukrainian food blogger Alex Mil to prepare this treat at home in just a few minutes, delighting your loved ones with incredible flavor.
Recipe for coconut pancakes
You will need the following ingredients for the pancakes:
- warm milk – 500 ml
- flour – 225 g
- butter – 40 g
- eggs – 3
- sugar – 40 g
- vanilla sugar – 10 g
For the filling, you will need:
- cottage cheese – 600 g
- condensed milk – 150 g
- coconut flakes – 6 tbsp
Instructions:
For the pancakes, add eggs, sugar, and vanilla sugar into a bowl and whisk. Add half of the warm milk and gradually add all the flour while stirring.
Pour in the remaining milk and melted butter. Mix everything until smooth and without lumps.
Fry in a pan, making the pancakes thin. Cook for 60 seconds on one side and 30 seconds on the other.
In a bowl, add the condensed milk and 6 tablespoons of coconut flakes, and mix well. Spread the filling on a pancake. Fold in both sides and roll it up. Sprinkle with coconut flakes and serve.
