Traditional Christmas stollen is a fragrant pastry rich in butter, raisins, and aromatic spices. It can be made with three fillings that are completely different from one another, as shared by the Ukrainian well-known cook and food blogger Liliia Tsvit.

Recipe for stollen with three fillings

Ingredients for 3 stollens:

  • Raisins – 400 g
  • Gingerbread spices – 10 g
  • Vodka – 200 ml
  • Milk – 150 ml
  • Sugar – 1 tbsp for the starter and 80 g for the dough
  • Yeast – 15 g
  • Flour – 100 g and 470 g for the dough
  • Eggs – 2
  • Sour cream – 50 g
  • Vanilla sugar – 10 g
  • Salt – 0.5 tsp
  • Butter – 250 g
  • Powdered sugar – 400 g

Fillings for the stollen:

Jam – 100 g
Cocoa – 1 tbsp
Korivka caramels – 7 pcs.

Instructions:

Pour boiling water over the raisins, then drain them. Next, add orange zest and spices. Pour in the vodka and leave to infuse for one day.

First, combine warm milk, yeast, and sugar, and mix thoroughly. Add the flour, mix again, and let it sit in a warm place for 40 minutes.

Add the eggs, sour cream, salt, sugar, and vanilla sugar to the butter and mix with a mixer.

When the starter has risen, add the butter mixture and combine. Sift in the remaining flour and knead the dough. Leave it to rise for 40 minutes.

Add the raisins to the finished dough and let it sit for another hour.

After that, divide the dough into three parts, roll each one out, and add a separate filling.

Place parchment paper between the stollens on the baking sheet so they don't stick to each other. Bake at 160 degrees for 1 hour.

Brush the hot stollens with butter and sprinkle with powdered sugar. Wrap each one in parchment and store in the refrigerator for up to 3 weeks.
