Ukrainians adore Italian cuisine – especially pasta, pizza, and risotto. But not everyone knows that these dishes are often simplified so much that they lose their true sound. And sometimes – even their meaning, Mykola Oleksiv, Ukrainian restaurateur from Naples, stated in an interview with RBC-Ukraine.

According to him, some Italian dishes in Ukraine have acquired an almost cult status, but in practice often differ greatly from the original. He adds that in Ukraine, pasta carbonara and risotto are very overrated.

"These are undoubtedly delicious and iconic dishes, but they are not always prepared in Ukraine the way they are traditionally made in Italy — often due to the lack of authentic ingredients or a misunderstanding of traditional techniques. Many Ukrainian restaurants serve these dishes quickly, in simplified versions, and without the finesse that makes them unique," Oleksiv explains.

Such a working method can leave guests with the feeling that Italian cuisine consists only of pasta, and nothing more. However, true Italian gastronomy is much richer and more diverse.

"It is important to understand that Italian cuisine is not just about individual recipes, but also about a philosophy of cooking, respect for seasonal ingredients, and craftsmanship," the expert says.

He advises Ukrainians to delve deeper into the regional characteristics of Italy and not to reduce the entire cuisine to a few popular dishes.

Varenyky – with potatoes, cabbage, or cherries – is the most popular. Deruny is the second hit, with the number of evening orders not inferior to Varenyky.

Borscht is also a steady favorite, requested by those who come for it a second time.

A separate story is meat. Italians enthusiastically order shashlik and ribs, noting not only the taste but also the Ukrainian methods of marinating.

But it's not only the taste that impresses Italians. They are sincerely surprised by the atmosphere of a Ukrainian establishment – the opportunity to sit for a long time, dine, and listen to music.
