Ukrainian crispy potato pancakes reinvented: Secret is in sauce

Potato pancakes, or deruny, are a traditional Ukrainian dish made from grated potatoes that is easy to prepare at home. Here is also a simple way to make a delicate sauce that perfectly complements the dish, shared by Ukrainian food blogger Mariia Makarchuk.
Recipe for potato pancakes with sauce
Ingredients:
- Potatoes – 1 kg
- Onion – 1 pc
- Carrot – 1 pc
- Garlic – 3 cloves
- Eggs – 4 pcs
- Flour – 4 tbsp with a heap
- Salt and pepper
- Oil – for frying
For the sauce, you will need:
- Cottage cheese – 300 g
- Sour cream – 150 g
- Feta (optional) – 100 g
- Dill
Instructions:
Peel all the vegetables. Grate them. Add the eggs, garlic, spices, and flour to the bowl with the grated vegetables and mix well.

Pour oil into a preheated pan and place the potato pancakes to fry. Cook on both sides until golden brown.

For the sauce, add sour cream, feta, dill, and spices to the cottage cheese. Mix thoroughly until the sauce is ready.
Place the potato pancakes on a plate, spread the sauce on top, and enjoy.
