In addition, the researchers found that elderberry juice reduced participants' blood glucose levels by an average of 24%, indicating a significantly improved ability to process sugar after carbohydrate consumption, and a 19% reduction in insulin levels.

The biggest benefit of elderberry is its ability to help burn fat. Those who consumed the juice showed a significant increase in fat oxidation or fatty acid breakdown after a high-carbohydrate meal and during exercise.
