Soft lemon cake that melts in your mouth: Easy recipe

A fragrant lemon cake is the perfect accompaniment to tea or coffee, and it's easy to make, even for beginners. It requires simple ingredients, and the result will delight everyone, says Ukrainian food blogger Kateryna Protsyshyna.
Lemon cake: Simple recipe
Main ingredients:
- Eggs – 2 pcs. (room temperature)
- Butter – 100 g
- Sugar – 80 g
- Flour – 100 g
- Vanilla – 1 tsp
- Baking powder – 1 tsp
- Juice of 1 lemon
- Zest of 1 lemon
For the glaze:
- Lemon juice – 20 ml
- Powdered sugar – 70 g
How to cook
First, whisk the eggs for 1-2 minutes. Combine the butter and sugar, then beat for 4-5 minutes with a mixer. Then, gradually add the eggs to the butter mixture in three stages.
Beat everything together until the mixture becomes lighter and the volume increases. Add sifted flour, vanilla, and baking powder, and mix with a whisk or mixer on low speed.

Next, add the zest and lemon juice, and mix again. Lightly grease the baking pan with butter.
Pour the batter into the pan and bake in a preheated oven at 160°C (320°F) for 30-35 minutes. Let cool in the oven with the door open.
For the glaze, mix lemon juice with powdered sugar and drizzle over the cake.
