Ginger honey cookies are perfect for cozy winter evenings, family gatherings, and baking with children. They turn out soft in the middle, tender, and wonderfully fragrant, made from simple ingredients without any complicated techniques.

Ingredients:

100 g sugar;

170 g honey;

1 tbsp spices (cinnamon, ginger, cardamom, nutmeg);

1.5 tsp baking soda;

130 g soft butter;

1 egg;

About 450 g of flour.
Instructions:

In a saucepan, combine sugar, honey, and spices. Heat over medium heat, stirring constantly, until the sugar is fully dissolved. Important: do not let the mixture boil. Remove from heat, add the baking soda, and stir quickly—the mixture will start to foam.

Add soft butter and egg, whisking until smooth and well combined. Gradually add the flour, kneading it into a soft, elastic dough. It should be slightly sticky rather than stiff.

Wrap the dough in cling film and chill in the fridge for 30 minutes. Roll out the dough to about 5 mm thickness. The cookies will rise nicely during baking. Cut out shapes as desired.

Bake in a preheated oven at 180°C (356°F) for 10–12 minutes until lightly golden. Avoid overbaking to keep the cookies soft.

Let the cookies cool completely—the spices’ aroma will intensify, and the texture will become tender. Optionally, decorate with icing or simply dust with powdered sugar.
