Tender lemon cookies with a fragrant filling are the perfect addition to tea or coffee. This simple recipe lets you prepare a dessert that melts in your mouth and leaves a fresh citrus aftertaste, as shared by Ukrainian food blogger Kateryna Protsyshyna on Instagram.

Tender lemon cookies with filling: Easy recipe

Ingredients:

Flour – 360 g
Baking soda – 5 g
A pinch of salt
Sugar – 160 g
Zest of one lemon
Butter – 200 g
Egg – 1 pc.
Lemon juice – 35 g

For the filling, you will need:

Cultured soft cheese – 160 g
Sugar – 30 g
Zest of one lemon

Instructions:

Combine all the filling ingredients and mix well. Shape into 25 g balls and place them in the freezer for 15-20 minutes.

Beat room-temperature butter with sugar and salt until smooth. Then add the egg and beat until fluffy.

Finally, pour in the lemon juice and add the flour mixed with baking soda. Fold the dough with a spatula. Divide the dough into balls, flatten them in your palms to make a small indentation, and place the filling inside.

Shape the dough into cookies and roll them in a mixture of sugar and lemon zest. Let them chill in the freezer for about 15 minutes. Then bake at 180°C for 15-20 minutes.

If desired, dust with powdered sugar at the end.
