Pampukhs with poppy seeds: Traditional Ukrainian recipe
Pampukhs are traditional Ukrainian buns that are baked or fried in oil. These round pastries are prepared not only for everyday meals but also for special occasions, particularly on Christmas Eve, the culinary YouTube channel "Mr Apron - simple recipes" reports.
What you need for pampukhs with poppy seeds
To prepare Ukrainian pampukhs with poppy seeds for Christmas, you will need the following ingredients:

Flour – 550 g
- Milk – 350 ml
- Eggs – 3 pcs.
- Butter – 50 g
- Yeast – 12 g
- Sugar – 2 tbsp
- Powdered sugar – 2 tbsp
- Salt – a pinch
- Oil – for frying
- Poppy seeds – 400–500 g.
How to cook pampukhs with poppy seeds
To make the dough for Christmas pampukhs, pour 250 ml of milk into a deep bowl, add yeast, 1 tbsp of sugar, and a few spoons of flour. Stir the mixture and let it sit in a warm place for 10–15 minutes. This will allow the mixture to start to rise, ensuring fluffy dough later.
Separate two egg yolks, but don't discard the whites - they will be needed at the end of the preparation. Use two yolks and one whole egg for the dough. Gradually add the remaining sugar to the eggs and beat the mixture until fluffy.
Carefully add the egg mixture to the other ingredients, set aside 100 g of the flour, and add the rest as well. Knead the dough, gradually incorporating the reserved flour.
Melt the butter and add it to the dough. Knead the dough again, place it in a bowl, cover it, and leave it in a warm place for an hour.
To prepare the poppy seed filling, thoroughly rinse the poppy seeds in a saucepan. Then, pour boiling water over them so that the liquid is about 1 cm above the seeds. Place the saucepan on the stove and cook the poppy seeds until all the water evaporates.
Next, pour in the milk and cook the filling for 3 minutes, stirring occasionally. Drain the milk, transfer the poppy seeds to a blender or mortar, add 1 tbsp of sugar, and grind them. Add 1 egg white to the poppy seed filling and mix thoroughly.
To make the pampukhs, divide the dough into equal-sized balls and roll each into a flat disc.

Place a teaspoon of poppy seed filling in the center of each disc, pinch the edges of the dough together, and roll the pastry in your hands to form a round shape. Heat oil in a pot - it should be enough to submerge the pampukhs fully.
Fry the pampukhs with poppy seeds until golden brown on all sides. Place the pampukhs on a napkin to remove excess oil, then transfer them to a plate and sprinkle with powdered sugar.
