It has probably happened to everyone at least once: you open a large, puffy bag of your favorite chips, only to find that it is barely half full. The first thought that comes to mind for most consumers is that manufacturers are simply fooling us, cleverly selling air and artificially increasing the size of the packaging.

Secret gas instead of oxygen

However, food industry experts assure us that a half-empty bag is not blatant deception, but a strict technological necessity. What's more, the bag contains something completely different from the air we breathe.

In fact, the space in chip bags is filled with nitrogen gas. This is done for several extremely important reasons that directly affect the quality of the product:

  • Protection against spoilage (oxidation). Ordinary air contains oxygen, which is the main enemy of fried potatoes. Oxygen causes fats to oxidize quickly, making chips bitter, unpleasant in taste, and causing them to spoil faster. Nitrogen completely displaces oxygen, acting as a natural preservative. This helps preserve the product's original taste, aroma, and freshness for months.
  • The protective cushion effect. Chips are a very fragile product. Imagine what would happen to them during transportation from the factory to a warehouse and then onto supermarket shelves if they were packed tightly. Nitrogen creates a springy cushion that absorbs impacts. That's why you get whole, crispy potato chips rather than a bag full of crumbs.

A marketing trick

Of course, marketing also plays a role. Manufacturers understand consumer psychology very well: a large, brightly colored bag attracts much more attention on a supermarket shelf and subconsciously seems like a better-value purchase.

However, if there were no need for a nitrogen cushion, making the bags so large would simply be unprofitable because of the additional packaging and logistics costs.

The main advice for shoppers: never judge a product by the visual size of the package. Always check the net weight (in grams) listed on the packaging. Only this figure tells you the actual amount of chips you are paying for.
