What you need for creamy lemon ice cream

To make creamy lemon ice cream, you'll need the following ingredients:

  • 200 ml heavy cream (33% fat);
  • 2 lemons;
  • 50 g sugar;
  • a pinch of vanilla (or a few drops of vanilla extract)

How to prepare creamy ice cream in a lemon

Making this dessert is quite simple and requires few ingredients. It's best to use large or medium-sized lemons so that the bowl made from the lemon peel is deeper and can hold more of the creamy filling.

Wash the lemons and pat them dry with a towel. Cut the lemons in half lengthwise.

Carefully scoop out all the pulp with a spoon, leaving a bowl made from the lemon peel.

Blend the lemon pulp until smooth. Strain the mixture through a cheesecloth or sieve into another bowl to remove excess pulp.

Pour the cream into a saucepan, add the sugar and vanilla extract. The vanilla is an optional ingredient that softens the lemon juice’s flavor, but you can make the ice cream without it.

Heat the cream mixture over medium heat, stirring until the sugar dissolves. There’s no need to bring it to a boil.
