Spring pancake rolls recipe to celebrate Chinese New Year
Spring rolls are small seasonal pancakes rolled into wraps. They are called "spring" because they are typically eaten during the Spring Festival (Chinese New Year) and are filled with seasonal vegetables.

Ingredients for spring rolls
To prepare this popular Chinese New Year dish, you'll need the following:
- Puff pastry - 1 pack;
- Cabbage - 350 g;
- Garlic - 4 cloves;
- Carrots - 200 g;
- Celery - 150 g
- Water - 6 tbsp;
- Sugar - 1/4 tsp;
- Salt - 1 tsp;
- Cornstarch - 3 tbsp;
- Pepper - a pinch;
- Sunflower oil - 2 tbsp;
- Sesame oil - 1 tsp;
- Flour - 2 tbsp.
How to make vegetable pancake rolls
Prepare the filling for the crispy rolls: Peel and finely chop the garlic. Cut the carrots and celery into short, thin strips.

Shred the cabbage into short strips. Mix the cornstarch with 3 tablespoons of water to prepare a starch solution.
To fry the vegetables, heat a pan over medium heat with 1 tbsp of sunflower oil. Add half of the garlic and fry for a minute until it releases a light aroma.
Add the cabbage and fry it, stirring for a minute. Sprinkle in half the sugar and salt and cook until softened.
Transfer the cabbage to a bowl, and fry the remaining garlic in the pan with 1 tbsp of sunflower oil. Add the celery and carrots. Fry the ingredients for a minute, then add the rest of the sugar and salt and cook until softened.
Next, return the cabbage to the pan with the carrots and fry for a few more minutes. Mix the cornstarch with 3 tbsp of water until smooth, pour it into the vegetables, and cook the filling for a few more minutes.

Cut the pancake dough into small squares. Place 1 tbsp of the filling on each square and roll it into small rolls. Seal the edges with a mixture of flour and water to prevent them from unraveling.

Fry the rolls for Chinese New Year in a deep fryer or a pan. After frying, place the rolls on paper to absorb excess oil.
