In Western Ukraine, the meatloaf is also known as the "fake rabbit" because this dish is made from various meats, but not rabbit. Supposedly, in old times, hunting and fresh meat were not accessible to everyone, yet people desired to put a meat dish on the table, so they came up with an alternative way to make it. This dish is still prepared for holidays in the cities of Western Ukraine. It is also popular in Europe and America and is mostly known as a meatloaf.

Ingredients:

  • Pork - 1 kg
  • Beef - 500 g
  • Onions - 3 pieces
  • Breadcrumbs - 100 g
  • Salt
  • Ground black pepper
  • Spice mix
  • Oil
  • Ketchup

Directions:

1. Cut the meat into chunks and grind it in a meat grinder to the consistency of minced meat. Finely chop the onions and fry them in oil until soft.
2. Dilute breadcrumbs with milk or water - add just enough liquid to make a mixture similar to porridge. Mix the mixture into the minced meat.
3. Add fried onions, salt, pepper, and your favorite herbs. Mix everything well and put it into an oiled rectangular cake tin. If you don't have it, you can shape the loaf by hand and place it on an oiled baking tray.
4. Preheat the oven to 180 degrees Celsius and bake for 60 minutes. If the top crust starts to brown too much, cover the loaf with foil. After an hour, take out the loaf, spread ketchup on top, and return it to the hot oven for 10 minutes so that the ketchup turns into a golden crust. Done!
