No-bake blueberry cheesecake - Perfect light summer treat

Blueberry cheesecake: Simple recipe
Ingredients:
- Coffee biscuits – 150 g
- Butter – 55 g
- Curd cheese – 550 g
- Plain yogurt – 220 g
- Sugar or sweetener – 80 g
- Water – 60 g
- Gelatin – 12 g
- Vanilla sugar – 5 g
- Lemon juice – 5 g
- Blueberries – 120 g
- Blue jelly – 2 packs
- Boiling water – 600 g
Total preparation time: 2 hours

Preparation steps
Crush the biscuits into crumbs and mix with melted butter. Press the mixture into a parchment-lined pan to form the base (no edges) and refrigerate.
Mix water and gelatin. Set aside to bloom. Combine curd cheese, yogurt, and sugar. Optionally, add vanilla sugar and lemon juice.
Blend everything until smooth. For a colorful effect, to get a blue-and-yellow cake, add yellow coloring. Melt the gelatin in the microwave and mix it into the cheese mixture. Pour over the base and refrigerate to set.
Once the cheese layer is set, gently press blueberries into it. Dissolve the jelly in boiling water and stir. Let it thicken slightly to a consistency of fruit jelly. Then spoon it over the cheesecake. Leave it until fully cooled.
