The pumpkin season has arrived in Ukraine. This unique recipe for preparing pumpkin for the winter will give you a bright, juicy, and rich flavor that resembles mango. How to make delicious pumpkin for the winter, according to the Telegram channel konservacia_kulinaria.

Secret to mango-like pumpkin

This recipe combines the tenderness of pumpkin with the zesty brightness of citrus fruits, creating an incredible flavor bouquet. Thanks to the lemon and oranges, an ordinary pumpkin preserve transforms into a true tropical delicacy that tastes like sun-ripened mango. Plus, it doesn't take much time to prepare, and the result will exceed all your expectations.

Ingredients (for 2.5 liters of finished product):

  • Pumpkin – 2 kg
  • Oranges – 2
  • Lemon – ½
  • Citric acid – 5 g
  • Sugar – 400 g

Step-by-step preparation

First, carefully peel the pumpkin and remove the seeds. Then cut it into small cubes. Place the cubed pumpkin in a large container where you will mix all the ingredients.

Take the oranges. Peel one orange and cut it into cubes. Cut the second orange into cubes with the peel. This will give the preserve a special aroma and a slight bitterness that perfectly balances the sweetness. Also, cut half a lemon into cubes with the peel, making sure to remove the seeds. Add the chopped oranges and lemon to the pumpkin.

Add sugar (400 g) and citric acid (5 g) to the fruit and pumpkin mixture. These ingredients not only provide the right sweetness and acidity but also help release the juice and act as preservatives.

Mix all the ingredients thoroughly. Leave the mixture for 3 hours so the pumpkin and citrus fruits release their juice. During this time, stir the mixture 3-4 times to ensure the sugar dissolves completely and the juice is evenly distributed. You will see plenty of fragrant juice forming in the container.

Prepare clean, sterilized glass jars. Fill the jars with the pumpkin-fruit mixture to the top, then pour in the released juice to ensure the fruits are fully covered. Cover the jars with clean lids (do not screw them on tightly).

Place the jars in a large pot. Line the bottom of the pot with cheesecloth or a small towel to prevent the jars from cracking from direct contact with the base. Pour water into the pot so that it reaches just below the tops of the jars.

Bring the water to a boil, then sterilize the jars for 30 minutes. After sterilization, carefully remove the jars and screw the lids on tightly.
