How to choose a pineapple
Hold the pineapple in your hands and check how the top moves. If it hardly moves, the pineapple is not ripe; if it twists out completely and way too easily, the fruit is overripe.
Check the color on the bottom of the pineapple - it should be yellow or slightly orange, but never green or brown. In the latter case, the fruit may be frostbitten or spoiled.
Press on the fruit. The pineapple should deform slightly under your fingers. A hard or very soft fruit is a bad sign.
If you have a good sense of smell, you can also sniff the pineapple - a ripe one smells like pineapple, a green one doesn't, and an overripe one has hints of alcohol in its aroma.
