Ukrainians have been getting creative with their patties, whipping them up from potatoes, onions, cabbage, rice, buckwheat, fish, and meat. And these lentil pattied are perfect for those health-conscious folks looking to shed a few pounds before summer hits, according to Stravy (Meals - ed.).

Ingredients:

  • Red lentils - 200 g
  • Water - 500 ml
  • Broccoli - 150 g
  • Onion - 1
  • Garlic - 1-2 cloves
  • Carrot - 1
  • Spinach - 50 g
  • Chili pepper, ground coriander, smoked paprika - 1 tsp each
  • Salt and ground black pepper - to taste
  • Corn flour - 5 tbsp

Directions:

1. Rinse the lentils, place them in a saucepan, cover with water, and bring to a boil. Simmer over medium heat until all the water is absorbed.

2. Wash the broccoli, separate into florets, Wash the broccoli, disassemble it into florets, pour boiling water over it, cover it, and set it aside for 5 minutes.

3. Finely chop the onion and sauté over low heat until translucent.

4. Peel and finely chop the garlic. Wash and grate the carrot coarsely. Season with salt. Sauté together with the onion over low heat for 5 minutes.

5. Transfer the cooked lentils to a bowl, mix with the onion and carrot. Grate the broccoli. If the vegetable is soft, just chop it finely with a knife.

6. Wash the spinach and finely chop it. You can also add any other herbs you like.

7. Mix all the ingredients together, add the spices and corn flour. Knead the mixture and refrigerate for 15 minutes.

8. Shape the mixture into patties, coat them in corn flour or breadcrumbs.

9. Heat any oil in a skillet and fry the patties on both sides until golden brown.
