Chocolate mousse cake is one of the most popular modern desserts, combining a sponge cake base with an airy mousse. Thanks to stabilization with gelatin, the cake holds its shape well, has a clean cut, and is suitable both for home baking and professional pastry presentation, according to Ukrainian food blogger Alex Mil’s Instagram page.
Chocolate mousse cake: step-by-step recipe
Ingredients for the sponge base:

Flour – 130 g;

Eggs – 4;

Milk – 80 ml;
-
Oil – 55 g;
-
Sugar – 160 g;
-
Cocoa powder – 25 g;

Baking powder – 8 g;
-
Pinch of salt;
For the chocolate mousse:
-
Eggs – 2;
-
Sugar – 80 g;
-
Milk – 200 ml;
-
Dark chocolate – 200 g;
-
Gelatin – 12 g + 65 g water;
-
Heavy cream – 500 ml (33%);
For the glaze:
-
Dark chocolate – 100 g;
-
Heavy cream – 100 g;
For decoration: nuts, Ferrero Rocher chocolates, pine branches
Total time: 3 hours + overnight in the fridge
Instructions

Break the eggs into a bowl, add sugar and a pinch of salt, and whisk with a mixer until fluffy and white, about 6–8 minutes.

Add milk and oil and mix on low speed for 30 seconds.

Sift together baking powder, flour, and cocoa. Mix on low speed until smooth. Pour the batter into a cake ring and bake at 180°C (356°F) for 40–45 minutes. Check doneness with a skewer.

Trim the top of the baked sponge and cut it into two even layers. The sponge should remain moist and soft.

For the mousse, first combine gelatin with water and let it bloom. Whip the heavy cream to stiff peaks and set aside.

In a saucepan, combine eggs, sugar, and milk, and whisk constantly over heat until it comes to a boil.

Pour the hot mixture over the chocolate and let sit for 1 minute, then stir. To avoid lumps, blend with a hand blender.

Melt the bloomed gelatin and add it to the chocolate mixture, stirring well. Fold in the whipped cream and mix until smooth and homogeneous.

Place the sponge in a prepared ring lined with cling film and press it firmly. Pour in half of the mousse, add the second sponge layer, and pour in the remaining cream. Let it set.

Pour hot cream over the dark chocolate, stir until smooth, and coat the cake. Once set, remove from the ring and decorate.
