Easy sour cream cake anyone can bake — Even a kid

The Smetannyk cake wins over with its tender layers and creamy sour cream filling. We share a simple recipe that will let you prepare this homemade dessert quickly and effortlessly, according to Ukrainian chef Ivan Yaniuk.
Smetannyk cake
Ingredients:
- Eggs – 3 pcs.
- Sugar – 150 g
- Sour cream – 250 g
- Baking soda – 1 tsp
- Vinegar – 1 tsp
- Flour – 140 g
- Oil – 2 tbsp
- Cocoa – 40 g
For the cream, you will need:
- Sour cream – 600 g
- Condensed milk – 200 g
- Vanilla sugar – 10 g
- Lemon juice – 1 tsp
Instructions:
Break the eggs into a bowl, add the sugar, and beat with a whisk. Then add sour cream and mix again. Add the baking soda and immediately pour in the vinegar.

Once the mixture is well combined, add flour and cocoa, then knead the dough. After kneading, pour in the oil.
Line a baking tin with parchment paper and pour in the dough. Bake at 180 degrees for 20 minutes.

For the cream, add condensed milk to the sour cream and beat with a mixer. Add vanilla sugar and lemon juice. Continue beating until the mixture doubles in volume.
Cut the sponge cake into three parts with a knife. Spread cream over each layer and assemble the whole cake. Leave the cake to set in the refrigerator for 3 hours.
