Easiest carrot cake recipe with available ingredients
Carrot cake has become increasingly popular in recent years among both adults and children, and makes for an excellent choice for breakfast, a snack on the go, or a school lunch for kids. What's more, it's an easy recipe using simple and available ingredients.
Here's what you'll need:
- Carrots - 200 grams
- Eggs - 3
- Sugar - 180 grams
- Flour - 180 grams
- Baking powder - 10 grams
- Vanilla sugar - 1 packet
- Lemon zest
- Oil - 90 grams
- Raisins - 100 grams
How to make carrot cake:
1. Grate the carrots finely and add eggs, sugar, lemon zest, vanilla sugar. Mix the ingredients thoroughly until you have a uniform mixture.
2. Next, add the oil to the batter and mix well once again. Then, incorporate sifted flour along with baking powder and mix everything together.
3. Pre-soak the raisins in boiling water, rinse, and dry them. Then, add them to the batter and mix once more.
4. Place the finished batter into a parchment-lined baking tin with a diameter of 20 centimeters and place it in a preheated oven at 180 degrees Celsius for 40-50 minutes.
5. Once the cake has cooled, you can dust it with powdered sugar and serve it.
