Benefits of amaranth

Amaranth is rich in protein, composed of amino acids, promoting protein synthesis in the body, aiding liver function, and enhancing its ability to detoxify the body from harmful substances.

This porridge is essential for the immune system, fostering the formation of immune cells, antibodies, and other vital molecules, enhancing the body's ability to resist viral infections (thanks to the amino acid lysine).

It is also beneficial for heart health, fertility enhancement, and combating depression (aspartic acid). This grain also boosts endurance (alanine amino acid).

Amaranth contains various types of fiber, from soluble to insoluble, making it a good food for gut bacteria, binding harmful metabolic byproducts and preventing them from entering the bloodstream.

Rich in potassium and calcium, amaranth aids in elimination of excess fluids from the body.

With a low glycemic index of 35, it is beneficial for insulin resistance, diabetes, and obesity.

"One could elaborate on all the benefits of this porridge, but it's better to just remember the following: it's very good for you, so try to include it in your diet at least once a week. You can make it into a dessert by adding berries and nuts. Besides, it has a wonderful nutty flavor. In terms of texture, it's very similar to semolina porridge," said Skytalinska.
