Many people don't eat dairy and eggs for various reasons, making it quite challenging to make tasty and sweet pastries. However, there are proven recipes that don't require butter, eggs, or milk.

Below is a simple recipe for delicate shortbread cookies made with the simplest ingredients, citing Filizhanka Kavy (Cup of Coffee) café.

Ingredients:

  • 3 tablespoons of flour
  • 1 cup of water
  • 0.5 cup of oil
  • 1 tablespoon of sugar
  • 0.5 teaspoon of salt
  • 0.5 teaspoon of baking soda
  • Jam

Directions:

Take a large bowl and mix sugar with salt, add water, gradually sprinkle flour and knead elastic dough. Add hydrated soda and mix well.

Roll out the ready dough and cut out cookies of any shape you like. You can make various shapes - flowers with a hole, circles, squares. But make sure there's room for jam.

Place the ready cookies on a baking sheet lined with parchment paper.

Preheat the oven to 170-180 degrees Celsius and bake the cookies for 15 minutes. Keep an eye on the time, as if left in the oven for too long, the cookies will become hard.

Once the cookies cool slightly, add your favorite jam.
