Chicken Kyiv done right: Simple, juicy, and guaranteed to succeed

Chicken Kyiv is a classic Ukrainian dish that combines tender meat with a rich buttery flavor and can easily become the centerpiece of any lunch or dinner, says Ukrainian chef Ivan Yaniuk.
Recipe for Chicken Kyiv with mashed potatoes
Ingredients:
- Dill – 30 g
- Butter – 250 g
- Garlic – 3 cloves
- Salt and pepper – to taste
- Oil – 1 l
- Ground chicken – 600 g
- Eggs – 3
- Breadcrumbs – 200 g
- Flour – 50 g
- Potatoes – 300 g
- Cream – 50 g
Instructions:
First, chop the dill. In a bowl, combine the dill with 200 g of butter, grated garlic, and seasonings. Mix thoroughly.
Place the mixture on plastic wrap and roll it up as shown in the photo. Put the roll in the freezer for 15 minutes.

Peel the potatoes and set them to boil. Pour 1 liter of oil into a frying pan to heat up. Preheat the oven to 180°C.
Add seasonings to the ground chicken and mix well. Wet your hands with water and shape 4 balls of minced meat. Cut the frozen butter mixture into small pieces.
Place a piece of butter inside each meatball and shape it into a cutlet. Dredge first in flour, then in beaten egg, and finally in breadcrumbs. Repeat the egg and breadcrumb coating twice for extra crispiness.

Fry in the pan until golden brown. Then transfer the cutlets onto a baking sheet lined with parchment paper and bake in the oven for 10 minutes.
Mash the boiled potatoes, then add butter and cream.
