Cheese pleskanka - Interesting recipe of traditional Easter casserole
Pleskanka is a traditional dish mainly from western regions of Ukraine, typically prepared for Easter. In terms of preparation method and taste, pleskanka is very similar to our usual baked pudding or cheesecake, but it can be not only sweet but also savoury, with the addition of spices.

What do you need for cheese pleskanka
To prepare cheese pleskanka, you will need the following ingredients:
- 700g of curd cheese
- 5 eggs
- 70g of sour cream
- 6 tbsp of sugar
- 1 tbsp of starch
- 1 tsp of lemon juice
- 30-40g of raisins
- ceramic or glass baking dish
How to cook cheese pleskanka
Pour the cheese into a deep bowl and blend it thoroughly until it reaches a uniform consistency.
Beat 4 eggs in a separate bowl and add sugar. Using a mixer on low speed, mix the ingredients until the sugar is dissolved.
Melt the butter, pour it into the eggs with sugar, add lemon juice and starch. Mix everything with the mixer for about 20-30 seconds.
Then pour the mixture into the bowl with the cheese and mix everything with a whisk. Spread the raisins, add them to the cheese, and mix.
Beat an egg in another bowl, and separate the yolk from the white. Grease a baking dish with butter, pour in the cheese mixture, and brush the top with the yolk.
Preheat the oven to 180 degrees Celsius and bake the pleskanka for 40-45 minutes. After that, let the dish cool down - and the cheese pleskanka is ready.
