To remove the pit from the avocado, Ramsay "pricks" the pit with the blade of the knife and then wiggles the knife slightly, which causes the pit to move away from the avocado flesh. After that, all you need to do to quickly slice an avocado is to carefully cut through the flesh in a "grid" pattern without removing the skin.
Some people take out the flesh before slicing, but Gordon recommends slicing it first and then removing the skin. At the same time, you don't need to cut through the skin. This method cuts the avocado into cubes inside the skin.
