Mayonnaise is often used as a sauce for various dishes and as a dressing for salads, especially during the New Year period. We have gathered recipes for homemade mayo to suit different tastes for your salads and festivities on New Year's.

Classic mayonnaise from Klopotenko (a famous Ukrainian cook)

Ingredients:

  • 2 yolks
  • 125-150 ml sunflower oil
  • 10 grams of mustard
  • 1 tablespoon lemon juice
  • A pinch of salt

How to prepare:

Put yolks and mustard in a bowl. Take a whisk and start beating the ingredients. To prevent the bowl from moving on the surface, wrap it with a towel folded into a tube.

Add lemon juice, a pinch of salt, and beat the mixture well. It should become homogeneous. Gradually pour sunflower oil in a thin stream, constantly beating.

When the last drops of oil remain, and you add it to the sauce, mixing well, the mayonnaise will be ready.

Eggless mayonnaise

Ingredients:

  • Oil - 200 ml
  • Milk - 100 ml
  • Salt - 1 teaspoon
  • Sugar - 1.5 teaspoons
  • Mustard - 2 teaspoons

How to prepare:

Combine all ingredients in one container using a blender. Before preparing, make sure to take them out of the refrigerator and let them warm up to room temperature.

For the first few seconds, do not lift the blender from the bottom; then move it up and down until the mayonnaise becomes thick.

In addition to the basic ingredients, you can also add spices to taste.

Lean homemade mayonnaise

Ingredients:

  • Pickle brine - 100 ml
  • Oil to your taste - 120 ml
  • A pinch of salt
  • A pinch of pepper
  • Regular mustard - 1-1.5 teaspoons

How to prepare:

Pour the pickle brine, add pepper, salt, and mustard. Blend everything until smooth. Afterward, stir with a spoon, reaching to the bottom.

Gradually pour in the oil, lightly mix, and blend again.

As a result, you'll get approximately one measuring cup of mayonnaise. It's slightly thinner than usual but tastes just as good.

Dairy mayonnaise

Ingredients:

  • 2.5% milk - 150 ml
  • Sunflower oil - 300 ml
  • Mustard - 2-3 teaspoons
  • Lemon juice - 1 tablespoon
  • Salt and sugar to taste

How to prepare:

Pour room temperature milk into a blender bowl. Add sunflower oil and blend until a thick emulsion forms.

To the prepared mixture, add salt, sugar, mustard, lemon juice, and blend for another five seconds.
