What color yolk is healthiest? Scientist's recommendation
Many people believe that brightly colored egg yolks are much healthier than those with a paler hue.
Geneticist and scientist Oleksandr Koliada explains whether this is really the case.
About chicken egg yolks
The first thing you should know is that the color of the yolk depends on carotenoids, which hens get from their diet.
To make yolks more vibrant, producers often add natural colorants to the hens' feed. This is because people prefer buying eggs with such an appearance. However, this doesn't make the eggs any healthier.
An orange yolk doesn’t necessarily mean the egg is more nutritious. The only exceptions to this rule are eggs that are specifically enriched with vitamins, which are clearly labeled.
What yolk color is healthiest?
The color of the yolk is not an indicator of its nutritional value. Yolk is a rich source of nutrients, including protein, vitamins, and minerals, regardless of its color.
Can freshness be determined by the yolk?
No, it cannot. The only clear sign of spoilage is if the yolk is black—then it’s evident that the egg has gone bad.
