How to make it
Ingredients (for 1 serving):
- 2 slices of whole-grain bread
- 100 g (about 3.5 oz) cooked chicken breast (sliced or shredded)
- A handful of arugula
- 1-2 tsp Dijon mustard
- 2 tbsp thick Greek yogurt
- Salt and black pepper to taste
- A few slices of cucumber, tomato, or avocado
In a small bowl, mix the Greek yogurt with Dijon mustard. Add a pinch of salt and pepper. Spread the sauce on one or both slices of bread.
Place the chicken breast on one slice of bread. Top with arugula and other vegetables.
Cover with the second slice of bread and press gently.
Optionally, toast the sandwich in a dry skillet or grill for 1-2 minutes on each side to make the bread crispy.
