This Christmas, try something new and make a classic English fruitcake with dried fruits and nuts. Such a cake is sure to delight the entire family, according to the Shuba website.


To make a delicious Christmas cake, you will need the following ingredients:

  • Candied fruits: 120 g
  • Sugared fruits: 100 g
  • Dark raisins: 40 g
  • Rum: 3 tbsp
  • Unsalted butter: 113 g
  • Sugar: 10 tbsp
  • Chicken eggs: 3
  • Vanilla sugar: 1/2 tsp
  • Almond extract: 1/4 tsp
  • All-purpose flour: 195 g
  • Almond flour: 50 g
  • Baking powder: 1 tsp
  • Salt: 1/4 tsp
  • Lemon zest: 10 g
  • Milk: 1/4 cup


Start by mixing fruits and dark raisins in a bowl. Add rum, cover with a lid, and leave at room temperature for at least a day (up to two days), occasionally stirring.

When ready to prepare the dough, preheat the oven to 180°C, place a rack in the center of the oven, and grease a 23×13×8 cm pan with butter.

In a separate bowl, combine flour, ground almonds, baking powder, salt, and lemon zest.

Using a mixer, beat unsalted butter and sugar until light and fluffy. Add eggs, flavorings, all the candied, sugared and dried fruits together with the liquid, and beat until smooth. Then add half of the flour mixture and mix.

Next, pour in the milk and add the remaining flour mixture.

Spread the batter into the prepared pan and decorate the top of the cake with almonds. Bake for about 60-70 minutes.

At the end, remove from the oven and let it cool on a rack for about 10 minutes before removing from the cake mold.
