Softest apricot cake you'll ever try - Ready in no time

The apricot season is in full swing. So, it's the perfect time to treat yourself and your loved ones with airy summer desserts. Apricot charlotte is the ideal pastry to enjoy with tea and will definitely become your summer favorite, says Ukrainian food blogger Anna Stankevych.
Apricot charlotte: Simple recipe
Ingredients for a 22 cm baking pan:
- apricots – 10-12 pcs
- eggs – 4 pcs
- sugar – 120 g
- flour – 150 g
- baking powder – 1/2 tsp
- vanilla – optional
You can also sprinkle the top of the pie with a mix of sugar and cinnamon before baking.
Easy preparation
Combine the eggs with the sugar in a mixer bowl and beat for 10 minutes until fluffy. Then add the flour, vanilla and mix.
After that, pour the batter into the baking pan, decorate the top with apricots, and place in the oven.
Bake the pie at 180°C (356°F) for about 40-45 minutes until it has a beautiful golden crust. Let it cool before removing from the pan, then sprinkle with powdered sugar.
