Pancakes are a wonderful option for breakfast or dinner due to the variety of possible fillings, starting with simple ones like ham and cheese. Moreover, this common dish can be prepared differently, for example, in a breadcrumb coating, giving the pancakes a completely new taste.

Ingredients for pancakes in breadcrumbs

To prepare crispy pancakes with a delicious filling, you will need the following ingredients:

  • Flour - 220 g
  • Milk - 500 ml
  • Eggs - 7
  • Sugar - 2 tbsp
  • Ham - 150 g
  • Cheese - 255-260 g
  • Cheese sauce (or mayonnaise or Philadelphia cheese) - 100 g
  • Breadcrumbs - 250 g
  • Salt - a pinch
  • Oil - 2-3 tbsp
  • Sour cream - for frying

How to cook pancakes in breadcrumbs

To begin, make the pancake batter by combining 3 eggs with salt and sugar, and sift the flour into a separate bowl. Add half of the flour to the eggs, mix well, and pour in half of the milk - it should be barely warm, not hot or cold.

Next, add the remaining flour and mix the batter. Pour in the rest of the milk and mix until the batter is smooth. Add the oil, stir, and let the batter rest for 15 minutes.

Heat a pan and, shaking it, pour the batter so that it spreads evenly over the surface.

Fry the pancakes for 3-5 minutes on each side, reducing the heat to medium.

Spread sauce or mayonnaise on one side of the pancake, grate the cheese, and sprinkle it on top of the ham on the sauce. The grated cheese should weigh 250 g, so take a slightly larger piece than the weight of the ham.

Fold the pancake - first fold the sides, the top, and the bottom towards the centre to form a square, then roll it up.

Prepare the batter - lightly beat 4 eggs until smooth with salt to taste, and pour breadcrumbs into a separate bowl. Dip the pancake in the batter and coat it with breadcrumbs - and repeat this action.

Fry the rolls until golden brown, about 5-7 minutes on each side - and delicious pancakes in a crispy coating are ready.
