Traditional mayonnaise-based salads are easily replaced by light, crunchy, and incredibly aromatic dishes that provide plenty of energy while still being a healthy option. Ingredients
To make Aniston’s favorite salad, you’ll need a basic selection of readily available ingredients:
- couscous (quinoa or ready-to-eat chickpeas will also work) – 250 g cooked;
- cucumbers – 3 medium;
- onion – half an onion;
- parsley – plenty of fresh herbs;
- mint – 5–6 leaves for freshness;
- feta or bryndza – 100 g;
- pistachios – a small handful for crunch;
- lemon juice – 1 tablespoon;
- salt and black pepper – to taste;
- oil – for the dressing.
Step-by-step recipe
Note that the couscous does not need to be cooked traditionally. Add a little salt and 1 teaspoon of oil to the couscous, pour boiling water over it in a 1:1 ratio, cover and leave for just 10 minutes.
Thinly slice the cucumbers and onion. Chop plenty of parsley and the mint leaves — the herbs provide the foundation of the salad’s flavor.
In a large bowl, combine the prepared couscous, vegetables and herbs. Add crumbled feta or bryndza and chopped pistachios.
Dress the salad with lemon juice and oil, then gently toss everything together.

Helpful tips
Add salt carefully and gradually, as feta (or bryndza) and pistachios are already quite salty on their own.
The original recipe uses quinoa, but you can add some cooked chickpeas for extra filling power.
If you prefer, you can leave out the cheese (feta or bryndza) entirely. The salad will be even lighter while remaining just as delicious.
