Instead of pizza: Pancakes with ham and tomato recipe
These savory pancakes are perfect for a light lunch or snack. With accessible ingredients like ham, cheese, tomatoes, and corn, these pancakes taste very similar to pizza, according to Telegram channel "recipes from mil_alexx".
Ingredients
To make these "pizza" pancakes, you will need the following ingredients:
- Flour - 300 g
- Eggs - 2
- Milk (or kefir) - 400 ml
- Ham - 150 g
- Cheese - 100 g
- Corn (canned) - 100 g
- Tomato - 150 g
- Salt - 1 tsp
- Pepper - 1 tsp
- Paprika - 1 tsp
- Baking soda - 1 tsp
- Sugar - 1 tsp
- Oil - for frying
Directions
Prepare the filling for the pancakes. Cut the ham into small cubes and grate the cheese on a coarse grater.
You can substitute ham with fried or boiled chicken, or bacon. Choose cheese according to your taste.
Wash the tomato and cut it into cubes, the same size as the ham. Drain the liquid from the canned corn.
Pour the milk into a deep bowl, crack the eggs into the bowl, and mix lightly. You can use kefir instead of milk for a slightly tangier taste.
Gradually add the flour to avoid lumps, along with salt, pepper, paprika, and sugar, stirring the ingredients thoroughly.
Once the batter is smooth, add the filling: diced ham and tomato, cheese, and corn. If desired, you can add dill, basil, arugula, or even canned pineapple if you like Hawaiian pizza.
Mix the batter with the filling thoroughly. Heat a pan with a little oil. Place the pancakes in the pan, using about two tablespoons of batter for each pancake.
Fry them on low heat until golden brown, about 3 minutes on each side.
Let the pancakes cool slightly before serving. You can enjoy them with tomato paste, ketchup, or your favorite sauce.
