Artichoke is often considered a vegetable, though it belongs to the aster family. Native to the Mediterranean, it is now also grown in Ukraine.

Ukrainian professor and dietitian Oleg Shvets, on his Facebook, shares 7 little-known benefits of this vegetable.

Nutritional profile of artichoke

170 g of boiled artichoke contains about 90 kcal, 10 g of fiber, 5 g of protein, and significant amounts of folate, vitamin C, magnesium, potassium, and phosphorus. Low in fat, it is rich in antioxidants and the prebiotic fiber inulin.

7 benefits of artichoke

Helps lower cholesterol

A large 2017 study showed that artichoke leaf extract over 5–13 weeks reduces total and “bad” LDL cholesterol. The effect is linked to the antioxidant luteolin and its influence on the gut microbiome.

Supports healthy blood pressure

Artichoke supplements are associated with reduced systolic and diastolic pressure. The plant stimulates the eNOS enzyme, which dilates blood vessels, and potassium helps eliminate excess sodium.
