Country-style potatoes are one of the easiest side dishes to make at home. But to prevent the wedges from becoming too dry, overly soft, or soggy, it’s important to prepare them properly before they go into the oven.

RBC-Ukraine explains the secret to perfect country-style potatoes and the simple tricks that will help you achieve an appetizing, crispy crust.

Don’t skip this step

Wash the potatoes well and cut them into evenly sized wedges. If the skin is thin, leave it on – it will give the finished potatoes an even more interesting texture.

Here’s the important part: parboil the potatoes for 5–7 minutes in boiling salted water. They shouldn’t become completely soft – it’s enough for the edges to soften slightly.

Then drain the water and dry the potatoes thoroughly.

A little trick

While the potatoes are still in the pot, gently shake them several times. Small rough edges will form on the surface. During roasting, these uneven bits will brown nicely and create that delicious crispy crust.

Don’t skimp on the seasoning

Transfer the potatoes to a bowl and add a little vegetable or olive oil, salt, paprika, black pepper, and dried garlic.

If you like, you can also add dried rosemary, oregano or Italian seasoning.

The key is to toss the wedges well so that the oil and spices evenly coat the surface.

Give them some space

It’s best to place the baking tray in the oven beforehand so it gets thoroughly hot.

Then arrange the potatoes in a single layer, preferably leaving a little space between the pieces.

If the wedges are packed too closely together, they will release steam and start to cook in their own moisture rather than roast. What you need is dry, hot air to help create a crispy crust.

Bake without foil

Preheat the oven to 220–230°C (428–446°F).

Bake the potatoes for about 30–40 minutes, depending on the size of the wedges.

After approximately 15–20 minutes, turn them over so the crust browns evenly on all sides.

There’s no need for foil. It traps steam, which can leave you with a soft surface instead of a crispy one.

One more secret

Don’t rush to take the potatoes out as soon as they turn golden. For a really crispy crust, wait until the edges of the wedges are nicely browned.

It’s best to serve them immediately – hot potatoes have the most enjoyable crispy texture.

They pair perfectly with a simple sauce: sour cream or Greek yogurt + garlic + herbs + a pinch of salt.

That’s how ordinary potatoes become the kind of side dish you’ll want to eat while they’re still hot – with a golden, crispy crust on the outside and a soft center inside.
