Cookie-muffin with raspberry jam - Recipe for aromatic baking from Sweden
This delicious pastry with raspberry jam can be called both a muffin, a tartlet, and a cookie at the same time - but still, it's closer to the latter. The thing is, for baking, usually muffin tins are used, but the dough is made with cream butter, which is characteristic of cookies. However, this pastry can always be prepared as ordinary cookies, without molds, by making the dough layer thick.

What do you need for cookies with raspberry jam
To prepare this cookie, you will need the following ingredients:
- heavy cream - 125 g;
- sugar - 67 g;
- flour - 100 g;
- potato starch - 38 g;
- vanilla powder - 1 tsp;
- baking powder - 1/2 tsp;
- raspberry jam - 100-105 g;
- powdered sugar (optional) - 20 g;
- fresh raspberries (optional) - to taste.
How to make cookies with raspberry jam
Take the butter out of the refrigerator in advance or slightly heat it in the microwave - it should be at room temperature to make it easier to mix the dough.
Preheat the oven to 200 degrees Celsius. Meanwhile, prepare the dough. In a large bowl, combine the heavy cream with the sugar, stirring until well mixed.
In a separate bowl, mix the flour with the potato starch, vanilla powder, and baking powder. Then add the flour mixture to the cream and sugar mixture and stir until the dough is homogeneous.
Next, you can prepare the cookies in two ways: either roll out the dough to a thickness of 2.5-3 cm for flatter cookies, or divide the dough into evenly sized balls for future tartlets.
In the first case, cut out equal-sized cookies from the dough and transfer them to a baking sheet lined with parchment paper. In the second case, place the balls in paper muffin cups.
Make indentations in the future cookies and fill them with jam about 3/4 full. Bake the cookies for 10-12 minutes in the middle of the oven. They should be barely golden, remaining pale - otherwise, the dough will overbake and become hard.
Remove the cookies from the oven, let them cool, and sprinkle with powdered sugar or decorate with raspberries.
