Meringue, sometimes called meringue, is a famous dessert made from baked whipped egg whites and sugar. Bitter dark chocolate pairs wonderfully with the sweet taste, creating a perfect balance.
The culinary resource Shuba tells how to cook chocolate meringue.
What you need for chocolate meringue
To prepare this crispy dessert, you need the following ingredients:
- sugar - 180 g;
- eggs - 3 pcs;
- dark chocolate - 70 g;
- lemon juice - 6 g.
How to cook chocolate meringue
Take the eggs out of the refrigerator in advance for 3 hours. Then, crack the eggs into a bowl, separating the yolks from the whites. Since only the whites are needed for meringue, you can use the yolks for an omelet or another dish.
Whisk the egg whites on high speed with a mixer. When they start to thicken, begin adding the sugar, in three stages.
Beat the mixture thoroughly until it reaches a uniform consistency, ensuring the sugar is completely dissolved. Add the lemon juice and continue beating the egg whites until they form stiff peaks.
Break the chocolate into pieces, place them in a bowl, and melt them in the microwave. Stir the chocolate carefully to ensure there are no lumps.
Let the chocolate cool slightly. Then, slowly add it to the egg whites. Gently fold the mixture with a spoon to create a marbled effect.
Preheat the oven to 90 degrees Celsius, line a baking sheet with parchment paper. Fill a pastry bag with the meringue mixture and squeeze out portions of the dessert onto the baking sheet.
Bake the meringue for an hour and a half, slightly opening the oven door. After that, remove the finished meringue, let it cool, and serve.
