What is a springform pan

A springform pan is a tall, round baking pan consisting of two main parts: a base, a high-sided ring, and a clasp.

The clasp plays a key role in securing the base to the pan. You can release it to separate the base, making it easy to remove a cheesecake or other delicate dessert. Some pans feature a waffle-patterned base for easy release, while others have a nonstick coating.

Why a springform pan is essential for cheesecake

When preparing a cheesecake, a cookie or biscuit crust is placed at the bottom of the pan, then topped with a filling made from eggs, sugar, and cream cheese.

Cheesecakes are usually quite tall, and the high sides of the pan provide enough space to hold both the crust and the filling.

Because of the dessert’s delicate and creamy texture, removing it from a regular baking pan can be difficult. Flipping the pan, as you might with a standard cake, can ruin the smooth top—critical for the classic cheesecake appearance.

Cheesecakes are often baked in a water bath to ensure even heating. A springform pan allows you to remove the dessert after cooling without flipping it. As the cheesecake cools, it slightly contracts. The removable sides prevent tears and cracks along the edges, preserving the perfect shape.

Other cheesecake pan options

Solid metal pan

Works if you line the bottom well with parchment paper and leave extra to lift the cake. Main advantage – no leaking, but removing the cheesecake is trickier.

Ceramic pan

Good for serving the cake straight from the pan. Heats slowly, so baking is more even, but may take longer.

Silicone pan

Soft sides can cause the cheesecake to deform. Best to place the silicone pan on a baking sheet.

What not to use:

  • Thin disposable aluminum pans;

  • Plastic containers (even heat-resistant ones);

  • Glass is not labeled oven-safe.
