Not every cooking oil is equally suitable for frying. Some can withstand high temperatures without significant changes, while others break down more quickly. Pharmacist and health coach Yana Ukrainska explained which oils are considered the safest for cooking in a frying pan.
Which oil is best for frying?
First of all, it is important to understand that frying is not the healthiest cooking method. Therefore, it is better to replace it with baking or grilling, but not until a black crust forms.
Every oil has its own smoke point. For example, butter starts to smoke during cooking, so it is not intended for high-temperature heating.
Refined oil has a high smoke point and is intended for cooking. Unrefined "live" oil has a low smoke point, so it should never be used for frying. Ghee is intended for cooking.
Therefore, the ideal choice for frying is ghee or avocado oil. However, these are saturated fats, and the amount consumed should be controlled in your diet.
What you should know about sunflower oil
Sunflower oil is a popular choice for frying. Refined sunflower oil has a high smoke point (approximately 220–230°C (428–446°F)), making it well suited for pan-frying and deep-frying.
You can fry with refined sunflower oil, but it has certain drawbacks.
"There is a recommendation in nutrition to limit the consumption of this oil. It contains a large amount of omega-6, which promotes inflammatory properties and processes," Ukrainska added.
Therefore, in general, it is better to minimize this oil in your diet.
The same frying oil should not be used many times, especially if it has already darkened or has an unpleasant smell.
