Apple brownie without flour and sugar
The apple brownie is quite unusual, resembling banana bread, but not as sweet. It is also really soft due to its primary ingredient—apples. While apple brownies are a niche pastry, they will find their enthusiasts for sure, citing the culinary YouTube channel of Natalia Danilyuk.
Ingredients for apple brownies
To make this apple brownie, you will need the following ingredients:
- Cocoa powder - 4 tbsp
- Eggs - 4
- Apples - 4
- Butter (or oil) - 1 tbsp
- Baking soda - 0.5 tsp
- Lemon juice - 1-1.5 tsp
- Baking powder - 1 tsp
Directions
Wash the apples, peel them, and remove the seeds and stems. Then cut the apples into several pieces and grind them in a meat grinder or food processor until you achieve a puree.
The puree should not be too smooth, otherwise, the batter will be too runny. If there is too much liquid in the apple puree, you can drain it using cheesecloth.
Transfer the puree to a deep bowl and crack in the eggs. Next, add the oil or softened butter.
Mix everything until you achieve a homogeneous consistency. You can also add the eggs and oil to the apple puree in a blender and mix using the appliance.
Next, add the cocoa powder to the mixture and mix again until homogeneous. You can choose natural unsweetened cocoa powder, or sweetened cocoa to add sweetness to the baked good.
Add baking powder to make the batter rise and become fluffy and airy. You can use either 1 tsp of baking powder or 0.5 tsp of baking soda, neutralized with vinegar or lemon juice.
Grease the baking pan with butter and carefully pour in the chocolate mixture. It is better to choose a ceramic or glass baking dish, as it heats more evenly, promoting a better rise of the batter.
Preheat the oven to 180 degrees Celsius and bake the apple brownie for 40-50 minutes. To allow the pastry to absorb the apple juices, you can let it cool.
