What centenarian said
Recently, American Albert Stiles celebrated his remarkable milestone. He turned 100 years old.
To mark the occasion, a special vegetable dish was prepared for him — a beetroot and goat cheese terrine with walnuts.
"I’ve loved beets since childhood and eat them often. My mother was Native American and cooked a lot of curry with beets, though I also enjoy eating them in a more traditional way — cold with mashed potatoes," said Albert.
The American noted that the secret to reaching 100 was a "healthy lifestyle and the consumption of beets."
"It really didn’t seem possible. When I retired at 50, I thought I could only live until 70, and living to 100 seemed unrealistic," he added.

Benefits of beets
Beets are often praised as an impressive source of iron, potassium, fiber, manganese, and vitamin C, as well as antioxidants like betalains and betacyanins.
Specifically, betalains, which give the vegetable its red color, have potential anti-inflammatory properties.
According to research, betalains have chemopreventive properties. It is believed that betalains act as free radical scavengers, helping to identify and destroy unstable cells in the body, which in turn reduces the risk of certain types of cancer.
Red beet extract has a protective effect against cancer in organs such as the prostate, breast, liver, lungs, esophagus, and skin.
Beets are recommended for any gastrointestinal diseases and inflammation. They are particularly useful for constipation and gut microbiota issues.
Thanks to fiber, organic acids, and other elements, beets regulate metabolic processes and enhance intestinal motility.
