Turkish pureed soup: Quick and healthy lentil dish recipe
This flavorful Turkish creamy soup isn't just easy to make but also packs a healthy punch with lentils, which speed up metabolism, positively impact appetite and digestion, and provide the body with protein, according to the culinary YouTube channel Simple Recipes with Mariia Shcherbatiuk.
Ingredients for the soup:
- Lentils - 150 g
- Water - 1.5 liters
- Potatoes - 3-4 pieces
- Carrot - 1 piece
- Onion - 1 piece
- Tomato - 1 piece
- Oil - 3-5 tbsp
- Heavy cream - 20 g
- Lemon juice - from 1/4 lemon
- Garlic - 2 cloves
- Hops-suneli - 1/4 tsp
- Provencal herbs - 1/4 tsp
- Mint (fresh or dried) - a pinch
- Cumin - 1/5 tsp
- Greens - to taste
- Salt - to taste
- Pepper (parsley, dill) - to taste
Directions:
Start with potatoes, peel them and cut into pieces of any shape. Rinse the lentils well and add them to the pot along with the potatoes.

Cover the lentils and potatoes with water, place on the stove.
Dice the onion and slice the carrot. Pour oil and add heavy cream into a heated pan. Add the diced vegetables to the pan, season with salt, pepper, and spices - Provencal herbs, hops-suneli, mint, and cumin.

Meanwhile, dice the tomato. When the vegetables are fried, add the diced tomato to them and sauté for 3-4 minutes.
Check the potatoes and lentils for readiness. When they are cooked, add the onion, carrot and tomato mix to them, stir, and cook for another 5 minutes.

While the soup is cooking, chop the garlic, add it to the pot, and cook for a minute or two. Add lemon juice and blend the soup until smooth.

Pour the soup into bowls, garnish with finely chopped greens and enjoy!
