The blogger shared a recipe for sweet potato and cauliflower soup.

To prepare the praised dish, you will need cauliflower, shallots, garlic, red bell pepper, sweet potatoes, coconut milk, vegetable broth, olive oil, parsley, curry seasoning, salt, paprika, and cumin.

Carly first puts the vegetables on a baking sheet, drizzles them with olive oil and sprinkles them with seasonings, and bakes them for 40 minutes.

“This soup is so healthy. As a diabetic, I can use all these vegetable ingredients. Thank you for sharing,” a user named Rose wrote under the video.

After that, she puts all the vegetables in a blender and adds the rest of the ingredients and blends until smooth.

Why this soup is good for you

Cauliflower is high in fiber and lower in carbohydrates, so it can help maintain healthy blood sugar levels. Fiber not only aids digestion, but can also reduce the risk of chronic diseases such as diabetes.

It helps control weight by making you feel full, potentially reducing your overall calorie intake. Cauliflower is not only high in fiber, it is also rich in vitamins C and K, folic acid, and antioxidants that protect cells from inflammation and harmful free radicals.

Sweet potatoes are another high-fiber food that can help regulate blood sugar and reduce insulin resistance. It has a low glycemic index (GI), so it doesn't cause a spike in blood sugar like some other carbohydrates.

Bell peppers are packed with antioxidants that can reduce inflammation and improve overall health. Studies have shown that polyphenols in bell peppers can reduce the risk of diabetes and improve blood sugar control.

Capsaicin in bell peppers is also associated with increased fat burning and metabolic rate.

Garlic is beneficial for people with type 2 diabetes, as it has the potential to control blood sugar levels by increasing both insulin secretion and sensitivity.

If you are taking blood sugar medications, it is important to discuss the dosage of cumin with your doctor. Low-calorie, low-carbohydrate vegetables, especially non-starchy ones, are recommended for diabetics.

How to lower blood sugar

People with diabetes are also at risk for low blood sugar, known as hypoglycemia. Diabetics can control their blood sugar levels with the help of blood sugar tests.

Symptoms of high blood sugar usually come on gradually and may only start when your blood sugar becomes very high. Common symptoms include extreme thirst, heavy urination, weakness or fatigue, blurred vision, and weight loss.

Common causes of high blood sugar in people with diabetes include not feeling well, feeling stressed, eating too many sugary or starchy foods, being less active than usual, and skipping doses of diabetes medications.
