Buckwheat is an incredibly nutritious grain, especially popular among Ukrainians. Famous Ukrainian chef Yevhen Klopotenko suggests that a certain way of cooking it can make for the most delicious porridge ever.

1:2, meaning 1 cup of buckwheat to 2 cups of water.

How to make buckwheat porridge tastier and fluffier?

Klopotenko advises adding oil or a bit of butter to the pan, heating it well, adding it to the buckwheat, and sautéing for 2-3 minutes. Don't forget to stir. Afterward, transfer the buckwheat to a pot and cook as usual.

How to make buckwheat porridge without boiling?

Pour water (you can also use green tea or juice) over the grain in a 1:2 ratio, add salt, cover with a lid or plate, and let it soak for a minimum of 4 hours, but preferably overnight.

If the liquid doesn't get completely absorbed into the grain, strain it through a sieve. When soaked, the buckwheat grains remain intact but tender.

How to cook buckwheat in broth?

Buckwheat becomes more flavorful and rich if boiled in vegetable, mushroom, or meat broth. Follow the same proportions and cooking time as you would with water.

Klopotenko suggests adding spices. The perfect trio for this includes cardamom, a cinnamon stick, and a star anise. Of course, you can experiment, and don't forget about salt and butter, as these are essential components for any cooking method.
