Popular in Ukraine food that promotes longevity
Fermented cabbage, or sauerkraut, is a true Ukrainian superfood that is highly beneficial, according to dietitian Oksana Skitalinska.
Why sauerkraut promotes longevity
Cabbage contains beneficial lactic acid bacteria (lactobacilli) that literally rejuvenate our intestinal microbiome (which ages over time). It's a probiotic.
It has two types of fiber: soluble and insoluble. Soluble one absorbs all harmful substances (a sorbent), while insoluble promotes better bowel motility and serves as a prebiotic that nourishes beneficial bacteria (both lacto and bifido, among others).
It contains a lot of vitamin C in the L-form, which means it's instantly absorbable.
Cabbage enhances the absorption of protein-rich foods (eggs, meat, fish, legumes, mushrooms).
Complementing sauerkraut with berry juice, for example, viburnum juice, is good because:
- There will be even more vitamin C + phytonutrients.
- Enzymes for digestion, bile (because viburnum has bitterness), and other valuable substances will be better absorbed from food.
- Such a salad reduces inflammation in the body, beneficial for people with "inflammatory background": chronic, autoimmune diseases, obesity, cancer, and aging.
- It has anti-cancer properties.
- Promotes collagen synthesis.
- Low-calorie, low-glycemic.
And if you add a spoonful of olive oil to it, you'll get prevention of cardiovascular diseases as well.
