Christmas Stollen: Simple and yeast free recipe
Stollen is a traditional German Christmas pastry, a rich and aromatic bread that can be made without yeast and with cottage cheese, according to the YouTube channel Kitchen as Relaxation.
The incredibly rich taste of this pastry is achieved by a large amount of raisins, candied fruits, nuts, poppy seeds, marzipan, or other dried fruits soaked in aromatic alcohol.
Ingredients:
- Butter - 200 g
- Orange zest - to taste
- Lemon zest - to taste
- Sugar - 150 g
- Chicken eggs - 2 pieces
- Cottage cheese - 200 g
- Wheat flour - 200 g
- Baking powder - 10 g
- Mixed dried fruits - 450 g
Directions:
First, add citrus zest to softened butter and beat with a mixer. Then add sugar and beat again.
Next, add eggs, cottage cheese, beat until homogeneous.
Add flour and baking powder, beat the dough first with a mixer, then knead with your hands. After that, rinse the dried fruits, sprinkle them with a small amount of flour, and mix them evenly into the dough.
Divide the dough into 3 parts and form stollen. Place on parchment paper and bake in a preheated oven at 170°C for 40-45 minutes.
After baking, soak the hot stollen with melted butter on both sides and generously sprinkle with powdered sugar. Wrap in foil and leave to sit for at least 1 day.
